Ingredients
  

Chili Oil Salad Dressing:

  • 1/4 cup cup chili oil (ensure you grab a good ratio of ingredients and oil)
  • 1/3 cup seasoned rice vinegar
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1-2 dashes sesame oil
  • salt & pepper to taste

Salmon Salad:

  • 2 fresh salmon fillets
  • mixed salad greens (e.g., arugula, spinach, and watercress)
  • cherry tomatoes, halved
  • avocado, sliced
  • cucumber, sliced
  • sesame seeds for garnish
  • green onions, chopped, for garnish
  • red pepper, sliced, for garnish

Instructions
 

  • Combine Dressing Ingredients: In a container with a tight-sealing lid, combine the chili oil, seasoned rice vinegar, honey, soy sauce, and 1-2 dashes of sesame oil.
  • Shake Well: Secure the lid on the container and shake well to ensure all the ingredients are thoroughly combined.
  • Prepare Salmon: Grill or bake the salmon fillets until cooked through. Season with  salt and pepper.
  • Assemble Salad: In a large bowl, combine the mixed salad greens, cherry tomatoes, avocado slices, and cucumber.
  • Add Salmon: Flake the cookedsalmon and add it to the salad.
