Rich in History

Originating from ancient Rome, mulled wine dates back to the 2nd century. The early Greeks and Romans spiced and heated their wine to fend off winter’s chill. Mulled wine expanded across medieval Europe, revered for its medicinal properties and taste. It was known as “Hippocras” in France and “Glühwein” in Germany. The art of reducing wine to form a rich sauce finds roots in French cuisine, transforming wines into concentrated flavors. The tradition of mulling spices—cinnamon, cloves, and cardamom—originates from the East, used for both culinary and medicinal purposes. Their fusion in mulled wine and reduction sauces has since evolved, creating a time-honored culinary treasure.

Health Benefits in Every Bite

Wine reduction sauce offers an array of health benefits due to its primary ingredient—wine. Red wine contains antioxidants like resveratrol, known for potential heart health benefits and aiding in inflammation reduction. Moreover, the reduction process concentrates these compounds, amplifying their benefits. Additionally, mulling spices, including cloves and cinnamon, possess anti-inflammatory and antimicrobial properties, aiding digestion and potentially reducing blood sugar levels. When combined in mulled wine reduction sauce, these spices infuse the dish with both flavor and potential health perks, offering a delightful, aromatic sauce that tantalizes taste buds while potentially contributing to overall well-being.

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 shallots finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp brown sugar (optional, to taste)
  • salt and black pepper to taste

Instructions

  • Prepare Mulling Spice Infusion: In a small non-aluminum saucepan, combine the red wine and the entire contents of the Warm Wishes-Mulling Spice Pack. Bring it to a simmer over low heat and let it steep for about 15-20 minutes to infuse the wine with the mulling spices.

FAQ

Simmering times can vary based on quantities and heat levels. Generally, allow the sauce to simmer gently for about 15 to 20 minutes after bringing it to a boil. This duration enables the wine to reduce and the flavors from the spices to infuse. Remember, as it cools, the sauce will continue to thicken slightly. Adjust the simmering time based on the desired thickness for your sauce. Sauce should coat your spoon when it has reached the correct consistency.
Start by raising the heat slightly; it might not be hot enough for effective reduction. However, monitor the sauce closely. If the heat is too high, it can evaporate the liquid too quickly, risking burning or caramelizing the sugars. Find a balance and maintain a gentle simmer to gradually reduce the sauce. If it’s still not reducing, adjust the heat cautiously, ensuring it doesn’t scorch, or consider using a wider pan for more surface area.
While a red wine is traditionally used for wine reduction sauces, you can experiment with different varieties of red wine to alter the flavor profile. Opt for robust, full-bodied wines like Cabernet Sauvignon or Merlot for a richer sauce. Sweeter wines, like Port or Malbec, can offer a unique taste. Avoid overly sweet or delicate wines as they may not complement the spices and might not reduce wel
